I run a Dell 30" 2560x1600 @ 60mhz with one GTX680(used to have two which I SLI'ed, till I burnt one out...) mines got 4gig of v memory though.(not sure what practical difference that makes)
But I think you'll be fine with that. In RoF, on near max settings, you might not be putting out a solid 60fps when the scene gets really busy or on the ground, but it will look great and mine's pretty smooth at around 45~50fps in those situations.
Re spotting(disclaimer-I have very bad eyes!) I don't really find it easier to spot things far off.(unless I'm lucky) When objects first get rendered they are friggin small!
What it definitely dose do, is make it much easier to ID any contact much farther out. (And the sooner you know it's Vorly diving on you, the sooner you can start running!
